👩🏽⚕️ Dietitian's Note
I love pairing apples with Greek-style yogurt because it's a simple example of food synergy. Apples provide pectin, a prebiotic fiber that helps nourish the beneficial bacteria naturally found in yogurt. Combining prebiotic-rich foods with probiotic-rich foods is an easy way to support a healthy gut microbiome while enjoying a balanced breakfast. With over 30 grams of protein, plenty of fiber, and healthy fats from walnuts and tahini, this high-protein yogurt parfait is designed to keep you full, energized, and satisfied for hours.

Why You'll Love This Recipe:
This yogurt parfait delivers dessert-level satisfaction while fueling your body with real food. It's also:
- High in protein from Greek yogurt and optional almond powder.
- Rich in fiber from apples and dates for steady energy.
- Loaded with healthy fats from optional nuts and tahini for satiety.
- Naturally sweetened with dates and apples - no refined sugar needed.
👩🏼🌾 Ingredients
Below, I share ingredient notes from both a nutrition expert's and trained chef's perspective.

- Greek-style yogurt: Thick, creamy, and tangy-the protein-rich base that makes this parfait satisfying enough for breakfast.
- Apple: Crisp, juicy apples add refreshing sweetness and crunch. I prefer Honeycrisp or Pink Lady for their balance of sweet and tart flavors.
- Medjool dates: Blend into a rich caramel-like sauce that naturally sweetens the parfait without refined sugar.
- Almond powder (optional): Adds extra protein while creating an even creamier, cheesecake-like texture.
- Walnuts: Buttery, crunchy walnuts add richness and the perfect contrast to the creamy yogurt.
- Dark chocolate: A sprinkle of shaved dark chocolate makes every bite taste like dessert.
- Tahini: A drizzle of tahini adds a subtle nutty flavor that beautifully balances the sweetness of the apples and dates.

🥬 Substitutions
This recipe is versatile and easy to adapt. Below are some simple ingredient substitutions.
- Yogurt: Use plant-based Greek-style yogurt. Regular yogurt also works, but it contains less protein and has a thinner texture. Avoid added sugars, as they can overpower the natural sweetness from the dates and apples.
- Tahini: Swap with runny unsweetened peanut, almond, or cashew butter as desired.
- Nuts: Replace walnuts with peanuts, pecans, almonds, or use pumpkin seeds for nut-free.
- Date caramel: In a hurry? Blend tahini with a little maple syrup as a quick substitute.
- Chocolate: Use cacao nibs for a lower-sugar option or melt dark chocolate for a drizzle.
- Apples: Try pears or plums when apples aren't in season.
📝 How to Make High-Protein Yogurt Parfait
The complete recipe with exact amounts is below. These additional tips will help you get the best results.

- Soaking dates in hot water softens their skins and loosens the fibers, making them easier to blend into a smooth caramel-like texture. Use just enough water to cover them, and soak for 10 to 15 minutes. Save the soaking water for blending.

- For an even creamier result, use warm plant milk as well as water. If your dates are very dry or older, extend soaking time slightly. Always blend with the soaking liquid for maximum flavor and natural sweetness. Add almond powder for a protein boost.

- Top with the chopped apple, peanut butter, date caramel, walnuts, and chocolate chips for a perfect on-the-go balanced breakfast, packed with plant protein for lasting energy.
✔️ Storage & Meal Prep Tips
These simple tips will help this high-protein yogurt parfait preserve its flavor, texture, and powerful nutrients.
- Store the date caramel in a sealed jar in the fridge for up to 1 week.
- Keep chopped apples in an airtight container with a squeeze of lemon juice to prevent browning.
- Yogurt and toppings can be prepped ahead and stored separately for 3 to 4 days.
- Assemble the parfait right before eating so the nuts stay crunchy and the apples are fresh.
- For meal prep, layer ingredients in small jars for easy grab-and-go snacks.

🙋🏽♀️ Recipe FAQs
Yes, they can be-if they're made with the right ingredients. A high-protein yogurt parfait made with Greek or Greek-style yogurt can provide 20 to 30 grams of protein or more per serving. Adding ingredients like nuts, seeds, or protein powder can boost the protein even further while also providing healthy fats and fiber for a more satisfying, balanced breakfast.
To make yogurt more filling and protein-rich, start with plain Greek or Greek-style yogurt, then add ingredients like protein powder, almond powder, hemp hearts, pumpkin seeds, or chopped nuts. Pairing your yogurt with fiber-rich fruit, such as apples or berries, also creates a more balanced breakfast that helps keep you full longer.
Yes, a Greek yogurt parfait can support weight loss when it's built with protein- and fiber-rich ingredients. Greek yogurt provides protein to help keep you full, while fruit, nuts, and seeds add fiber and healthy fats for longer-lasting satiety. Choosing naturally sweet ingredients, such as fresh fruit and dates, instead of sugary toppings can make it a satisfying, nutrient-dense breakfast or snack.
Greek yogurt and Greek-style yogurt are among the highest-protein yogurts because much of the liquid is strained away, leaving a thicker texture and more concentrated protein. Plain, unsweetened varieties are the best choice, as they provide plenty of protein without added sugars. For a dairy-free option, look for a Greek-style plant-based yogurt that's fortified and made specifically to be high in protein.

Hi Nisha,
what a great dessert! I made it for guests today and I was asked for the recipe. Everybody loved it. Maybe because it tastes similar to well-known snacks and bars, I would never serve ... . But in this variation I know my guests had healthy fats, sweetness from dates, protein, fiber et cetera :-). The taste is well balanced; it's sweet, sour and fruity at the same time. I believe the protein powder is an important ingredient for the caramel-like consistency (I had pea protein powder).
One serving was a little bit too much for one person, but that may varie greatly from person to person.
Thank you again, I recomment your website at every opportunity!

I made a deconstructed version of this omitting the date caramel and instead choosing to flavor the yogurt with vanilla, sprinkle the apples with cinnamon, and chop up a date. The flavors were fanastic and I really enjoy it. Thanks for sharing!

I prepared this. It was so delicious. I'm only afraid of yogurt because I don't eat any dary into my diet ..i have read a lot bad comments about dairy so i stopped including in my diet many years ago. I had this recipe for breakfast. I feel lile accumulated a lot mocus in my throat after eating it. What do you think this happening?
Nisha Melvani, RDN says
Hi. I use vegan Greek-style yogurt. However, the idea that dairy increases mucus production is a common belief, but research doesn’t strongly support it. Most studies show that milk and dairy products do not cause your body to produce more mucus; rather, the texture of milk can make saliva feel thicker, which people often mistake for more mucus.
