- ½ cup grated cucumber or zucchini, squeezed dry
- 3 tablespoons chopped roasted red peppers from jar, rinsed (optional)
- 1 tablespoons pumpkin seeds roughly chopped
- 3 tablespoons chopped fresh parsley
- 1 small lemon zest and juice, plus more to taste
- 1 clove garlic
- Salt and pepper to taste
Instructions
- Soak chia seeds: In a medium bowl, whisk together the chia seeds, soy milk, and yogurt until well combined. Let it sit for 15 to 20 minutes (or refrigerate overnight) to thicken into a creamy base. Stir once or twice to prevent clumping.
