- 4 Medjool dates pitted
- Hot water to cover dates
- 1 scoop almond protein powder (optional) see notes
- ½ teaspoon cinnamon
- ½ teaspoon vanilla extract
For the Yogurt Bowl:
- 3 cups Greek-style yogurt plant-based or regular
- 4 medium apples chopped
- 4 tablespoons tahini or (melted) unsalted smooth nut or seed butter
- 4 tablespoons chopped walnuts or peanuts or pumpkin seeds
- 4 teaspoons dark chocolate chips
Instructions
- Make the date caramel: Soak the dates in hot water to cover for 10–15 minutes until soft. Transfer the pitted dates and ⅓ cup soaking liquid to a blender. Add protein powder (if using), cinnamon, vanilla, and salt. Blend until smooth and creamy, scraping down the sides as needed. Add more soaking water or nondairy milk, one tablespoon at a time, until it reaches a thick, drizzleable consistency.

what a great dessert! I made it for guests today and I was asked for the recipe. Everybody loved it. Maybe because it tastes similar to well-known snacks and bars, I would never serve ... . But in this variation I know my guests had healthy fats, sweetness from dates, protein, fiber et cetera :-). The taste is well balanced; it's sweet, sour and fruity at the same time. I believe the protein powder is an important ingredient for the caramel-like consistency (I had pea protein powder).
One serving was a little bit too much for one person, but that may varie greatly from person to person.

Hi. I use vegan Greek-style yogurt. However, the idea that dairy increases mucus production is a common belief, but research doesn’t strongly support it. Most studies show that milk and dairy products do not cause your body to produce more mucus; rather, the texture of milk can make saliva feel thicker, which people often mistake for more mucus.
