Flour- Use 1⅓ cups oat flour, all-purpose flour, gluten-free rice flour blend, or whole wheat pastry flour instead of chickpea flour. All bake well with the same liquid ratio.
Psyllium Husk: Substitute 1 ½ tablespoons psyllium husk with 1 tablespoon chia seeds.
Flaxseed meal: Replace with chia seed meal (ground chia seeds in the same amount). Both act as binders and add fiber and omega-3s.
Applesauce: Swap with mashed ripe banana or pumpkin purée (½ cup). These keep the moisture and sweetness.

These tips will help you get the best results from this protein-rich zucchini bread recipe.

Soak the dates in hot water for 10 minutes while you prepare the other ingredients. Then pit the dates yourself-freshly pitted dates are usually softer and more flavorful than pre‑pitted ones.

Grate the zucchini using the largest holes on a box grater. Keep the skin on for maximum nutrition. DO NOT squeeze the zucchini to drain the water.

Drain the dates, saving the soaking water. Pour it into a measuring cup and top it up with fresh water until you have 1 ¼ cups total.

Mix the dry ingredients first, before adding the wet.

The batter consistency should be thick but scoopable, similar to muffin batter. If it is runny, add 1 to 2 tablespoons of flour. If it feels too dry to mix, add 1 to 2 tablespoons of non-dairy milk.

Gently fold in any add-ins (like nuts, seeds, or chocolate chips) at the very end of mixing to keep the batter light and evenly distributed.

Pan Prep: Prepare either a standard loaf pan, mini nonstick loaf pans, or a muffin tin. Line with parchment paper (I trace the bottom of the pan for easy cutting) or lightly grease.

Bake on the middle rack at 350°F (175°C) for 30 to 45 minutes, depending on the size of your loaf pan. Wider pans where the batter is lower will need less cooking time, while deeper pans will need more. If the top browns too quickly, move to the lower rack.
