Instructions
- Soak the lentils in enough water to cover by about 2 inches for 2 ½-3 hours. Do not soak longer. Rinse and drain well.
- Preheat the oven to 355°F (180°C). Lightly grease or line a baking pan with parchment paper or use a nonstick pan. (See recipe notes.)
- Prepare the flax egg: In a small bowl, whisk together the ground flaxseed and water. Let sit for 10 minutes (or refrigerate for 5 minutes) while you prepare the remaining ingredients so it can thicken.
- Mash the bananas in a large bowl until mostly smooth.
- Blend: Add the drained lentils, mashed bananas, nondairy milk, dates, and maple syrup to a high-speed blender. Blend until completely smooth.
- Combine: Pour the batter into a large bowl. Add the flax egg and cocoa powder and fold until combined.
- Add the baking powder, baking soda, and apple cider vinegar to the batter. The mixture will begin to fizz. Gently stir until just combined. Once you add the baking powder, baking soda, and vinegar, mix gently and bake right away for the best rise.
- Pour the batter into the prepared pan.
- Bake for about 30 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Let the cake cool in the pan for about 10 minutes. Run a thin spatula around the edges, then invert onto a cooling rack and cool completely.
- Optional chocolate topping: If using the topping, melt the dark chocolate chips in the microwave in 20-second intervals, stirring between each, until smooth. Drizzle over the cooled cake before slicing.

Hi. Please use split red lentils for the recipe to work. It's best stored in an airtight container in the refrigerator for up to 4–5 days. Since this cake is made with lentils, it isn't meant to taste or feel like a traditional chocolate birthday cake. It has a denser, more wholesome texture. I would add the chocolate drizzle.

Made this and loved it! I realized at the last minute I didn’t have dates so I quickly subbed in a bit of applesauce, two tsp of honey and a bit of monkfruit sweetener and it still turned out perfectly. Even my husband who generally hates any dessert labeled as “healthy “ liked it! Going to make a compote with frozen raspberries, currants and chia seeds tomorrow to add a bit of acidity and fruitiness and then may just eat it for breakfast the rest of the week. I would use 3 to 4 tbsp date paste. It depends on the size of the muffins. Perhaps check at 18 minutes by inserting a toothpick into the center—it should come out with a few moist crumbs but no wet batter.

After soaking for about 3 hours, they're soft enough to blend, and baking the cupcakes for 18–22 minutes cooks them through. The lentils won't be raw by the time the cupcakes are done—they'll be fully cooked and tender. If you're ever unsure, you can insert a toothpick to check for doneness, and the cupcakes should feel set in the center.

Omit the cocoa powder and add: 3 tablespoons oat flour (or whole wheat pastry flour), 2 teaspoons ground cinnamon, 1 teaspoon ground ginger, ½ teaspoon ground cardamom, ¼ teaspoon ground nutmeg, ⅛ teaspoon ground cloves (optional). I have not tested this but I believe it would work out well.
