Thankyou so much for this site. I love the recipes and all the expert info you provide. Everything is very clear to understand. I have a question for you that I’m hoping you can help Me with. I have type 2 diabetes and was diagnosed a year ago with a condition called G.A.V.E It’s the acronym for Gastric Antral Vascular Ectasia so food must do double duty of lowering blood spikes without scraping or irritating stomach wall. I was wondering if to the fibres in this recipe would be too high in roughage.

GAVE is a condition where I would definitely want you to follow the advice of your gastroenterologist or a dietitian who knows the severity of your condition. There aren’t standardized dietary guidelines for GAVE, so I wouldn’t want to tell you that the amount or type of fiber in these salads is necessarily appropriate for you. Some of these salads are quite high in fiber and contain foods with more physical roughage, such as raw vegetables, whole beans and lentils, and seeds. Depending on what your medical team has recommended, softer options such as well-cooked vegetables and very soft beans or lentils—or even blending some ingredients—may be better tolerated while still providing fiber and helping with blood sugar management. I would show your gastroenterologist or dietitian the specific salad you’d like to make and ask whether its ingredients and texture are appropriate for you. I’m happy to help you modify any of the recipes once you know what types and amounts of fiber they would like you to limit.
