Unlike many eggplant salads that rely heavily on oil, this version gets most of its flavor from the naturally tangy brine from the artichokes, fresh lemon juice, garlic, Dijon mustard, and herbs. A spoonful of tahini adds extra creaminess while keeping the dressing wholesome and satisfying.

👩🏽⚕️ Dietitian's Note
Every main ingredient in this salad earns its place. Artichoke hearts provide soluble fiber that helps remove cholesterol from the body, black soybeans deliver both soluble fiber and cholesterol-lowering soy protein, and eggplant contributes viscous soluble fiber-the type of fiber featured in the Portfolio Diet for lowering LDL cholesterol.
Why You'll Love This Recipe:
This Eggplant Salad is flavorful, protein-packed, and comes together quickly. Plus, it's also:
- Designed with heart health in mind. Eggplant, artichoke hearts, black soybeans, and pumpkin seeds are naturally rich in fiber and other beneficial plant compounds that support healthy cholesterol levels.
- High in plant protein. Black soybeans make this salad hearty and satisfying, but white beans, chickpeas, or edamame work just as well.
- Bright, fresh flavor. A tangy lemon-herb dressing with artichoke brine perfectly complements the silky roasted eggplant.
- Perfect for meal prep. The flavors meld and become even more delicious after a few hours in the refrigerator.
- Naturally vegan and gluten-free. Made with wholesome, minimally processed ingredients.
👩🏼🌾 Salad Ingredients
Below, I share ingredient notes from both a nutrition expert's and trained chef's perspective.

- Eggplant: Roasting transforms eggplant into a silky, melt-in-your-mouth vegetable with rich, caramelized flavor. Leave the skin on for extra fiber and antioxidants.
- Artichoke Hearts: Jarred artichokes add tangy flavor while contributing soluble fiber. Don't discard the brine-it creates a bright, flavorful dressing with no need for lots of oil.
- Beans: My favorite bean for this recipe are black soy beans because they're exceptionally high in both protein and fiber. White beans, chickpeas, or edamame also work well.
- Pumpkin Seeds: Add crunch along with heart-healthy unsaturated fats, magnesium, and plant protein.
- Fresh Parsley: Brightens the salad and complements the roasted vegetables.

🫙 Dressing Ingredients

- Artichoke Brine: Don't pour it down the drain! The tangy brine adds bright, savory flavor and helps emulsify the dressing without needing much oil.
- Lemon Juice: Fresh lemon juice brightens the salad and balances the richness of the roasted eggplant.
- Garlic: Fresh garlic adds bold flavor and pairs perfectly with the Mediterranean-inspired ingredients.
- Dijon Mustard: Helps emulsify the dressing while adding a subtle tanginess. Stone-ground mustard works well too.
- Italian Herbs: A convenient blend of herbs that complements the eggplant and artichokes. Dried oregano, thyme, or basil are excellent substitutes.
- Tahini (Optional): Blend in tahini for a creamier, richer dressing with a boost of healthy unsaturated fats and calcium. Omit it for a lighter vinaigrette.

🌱 Substitutions
This recipe is versatile and easy to adapt. Below are some simple ingredient substitutions.
- Black soybeans: Substitute cooked edamame, chickpeas, cannellini beans, butter beans, or navy beans.
- Jarred artichoke hearts: Use canned artichoke hearts if preferred. Marinated artichoke hearts add extra flavor from herbs and spices, while artichoke hearts packed in brine have a cleaner flavor and lower fat. Both work well in this recipe.
- Parsley: Fresh dill, basil, cilantro, or mint all work well.
- Pumpkin seeds: Use sunflower seeds, chopped walnuts, pistachios, sliced almonds, or pecans.
- Italian seasoning: Replace with dried oregano, thyme, basil, Herbs de Provence, or your favorite Mediterranean herb blend.
- Dijon mustard: Stone-ground or whole-grain mustard are excellent alternatives.
- Tahini: Omit for a lighter vinaigrette, or substitute unsweetened soy yogurt for a creamy dressing.
- Lemon juice: Lime juice or red wine vinegar both work well.
📖 How to Make Mediterranean Eggplant Salad
This is an overview. The full recipe is at the bottom of the post.
Prepare the salad:

- Cut the eggplant into 1-inch-thick rounds, then cut each round into 1-inch cubes. Place them on a parchment-lined baking sheet. Don't overcrowd the baking sheet. Spread the eggplant in a single layer so it roasts instead of steams.

- Roast the eggplant. For an oil-free version, sprinkle with salt and bake until deeply browned and tender. If desired, lightly spray the eggplant with oil before roasting to encourage even browning and a slightly crispier exterior. Flip halfway through for more even caramelization.

- Roughly chop the artichoke hearts into small pieces so they distribute evenly throughout the salad. Don't discard the liquid! Reserve the brine or marinade before draining-it forms the flavorful base of the dressing. If using marinated artichokes, expect a slightly richer, more herbaceous dressing.

- Use toasted or raw pumpkin seeds. I use raw pumpkin seeds to preserve their delicate fats and nutrients, but you can lightly toast them if you prefer a nuttier flavor. Stir the pumpkin seeds into the salad, or reserve them to sprinkle on top just before serving for extra crunch.
Prepare the Dressing:

- Reserve the artichoke brine before draining the jar. It adds bright, tangy flavor to the dressing without needing extra vinegar.

- Combine the artichoke brine, lemon juice, garlic, mustard, onion powder, Italian seasoning, and salt and pepper in a blender or jar.

- For a richer, creamier dressing, add the optional tahini. While optional, tahini adds delicious flavor and healthy unsaturated fats that help your body absorb fat-soluble nutrients from the vegetables.

- Blend or whisk: Finely mince the garlic and whisk all the ingredients together in a jar. Alternatively, leave the cloves whole and blend the dressing ingredients until smooth.

- Blending creates a smoother, creamier dressing.

- Add the roasted eggplant, artichoke hearts, beans, parsley, and pumpkin seeds to a large bowl. Pour the dressing over the salad and gently toss until everything is evenly coated.
✔️ Storage & Meal Prep Tips
Store in an airtight container in the refrigerator for up to 4 days. The flavors continue to develop, making this salad ideal for meal prep. I don't recommend freezing, as the eggplant becomes too soft once thawed.

🙋🏽♀️ Recipe FAQs
Yes, eggplant can be eaten raw, but it's often bitter, spongy, and has a firm texture that many people find unpleasant. Roasting transforms it into a silky, tender vegetable with a sweeter, richer flavor, making it ideal for this salad.
No. Soaking eggplant in water isn't necessary for most modern varieties, which have been bred to be much less bitter than they once were. Roasting naturally softens the eggplant and brings out its sweet, caramelized flavor. If your eggplant seems slightly bitter, simply roast it until it's deeply browned and tender.
Eggplant pairs beautifully with bright, acidic ingredients like lemon, tomatoes, and vinegar, as well as garlic, fresh herbs, olives, capers, tahini, and Mediterranean spices. It's also delicious alongside beans, chickpeas, tofu, whole grains, and crunchy nuts or seeds for a satisfying meal.

EQUIPMENT
- 1 large baking tray
- 1 Immersion blender or blender (optional)
Instructions
- Preheat the oven to 425°F (220°C). Line a large baking sheet, or two smaller sheets, with parchment paper. Optional but recommended: Lightly spray the sheet with oil so the eggplant does not stick.
- Cut eggplant: Slice the eggplant into 1-inch-thick rounds, then cut each round into 1-inch cubes so the pieces cook evenly.
- Roast the eggplant. Transfer the eggplant to the prepared baking sheet. Don't overcrowd the baking sheet. Spread the eggplant in a single layer so it roasts instead of steams. For an oil-free version, sprinkle with salt and bake until deeply browned and tender. If desired, lightly spray the eggplant with oil before roasting to encourage even browning and a slightly crispier exterior. Roast for 30-40 minutes, or until the eggplant is tender and deeply browned. Flip the eggplant pieces after 20 minutes for more even caramelization.
- Drain the artichoke hearts. Set aside ½ cup of the brine or marinade before draining the artichokes-it forms the base of the dressing.
- Chop the artichokes: Roughly chop them into bite-sized pieces so they distribute evenly throughout the salad.
- Make the dressing. Add the reserved liquid, lemon juice, tahini, garlic, Dijon mustard, Italian seasoning, and onion powder to a blender. Blend until smooth. Alternatively, finely mince the garlic and whisk all the dressing ingredients together in a bowl.
- Assemble the salad. Add the roasted eggplant, artichoke hearts, black soybeans, parsley, and pumpkin seeds to a large bowl. Alternatively, reserve some or all of the pumpkin seeds for sprinkling on top just before serving for extra crunch. Pour the dressing over the salad and gently toss until evenly coated.
- Serve. Taste and adjust the seasoning as needed. Garnish with additional parsley and the reserved pumpkin seeds for extra crunch, if desired.
