Looking for a tasty and healthy salad dressing option? Try this creamy homemade vegan honey mustard dressing recipe with simple ingredients. This multipurpose dressing pairs well with almost any salad or veggie bowl.
Make this dressing with roasted or raw garlic. You will get the most nutrients from this Vegan Honey Mustard Dressing if you use raw garlic and lemon as the health-boosting compounds, allicin and vitamin C, are heat-sensitive. However, roasting the garlic and lemon significantly enhances the flavors.
As a compromise, we can follow the 10-minute garlic rule and preserve a portion of allicin, the phytonutrient responsible for garlic's anticancer benefits. Smash the garlic, and then wait 10 minutes before roasting. When the garlic tissues are crushed, the enzyme alliinase mixes with alliin and turns it into allicin! If you roast it without crushing, the two never mix, and cooking destroys the enzyme. Plus, roasting garlic destroys much less allicin than stir-frying or boiling.

📖 How to Make Vegan Honey Mustard Dressing

Step 1. (optional) Smash the garlic cloves. Roast the lemon and garlic at 400ºF for about 20 minutes, or until the garlic is softened.
Step 2. (optional) Squeeze the garlic cloves from the skins, and the lemon juice, into a medium bowl.
Step 3. Add the tahini, maple syrup, mustard, and water. Mix well to combine. Add salt and pepper, more lemon juice, maple syrup, and water to taste.
Step 4. Serve with your favorite veggie bowl or salad.

Peeled roasted garlic can be refrigerated in an airtight container for up to 2 weeks, or in the freezer for up to 3 months. Do not store roasting garlic in oil as this carries the risk of botulism.

- 2 to 3 large cloves garlic (or 1 clove, minced)*
- 1 small lemon halved
- ¼ cup tahini
- 2 teaspoons mustard (wholegrain or Dijon)
- 2 teaspoons maple syrup or agave, plus more to taste
- 2 tablespoons water plus more as needed
- Salt and pepper to taste
Instructions
- For roasted garlic Honey Dijon dressing:Preheat the oven to 400ºF.Smash 3 garlic cloves gently. Roast them (skin on) with the lemon and 400ºF for about 20 minutes, or until the garlic is softened.Squeeze 2 garlic cloves from the skins, and the juice from one-half of the lemon, into a small bowl. Mash the garlic until smooth.Add the tahini, maple syrup, mustard, and water. Mix well to combine. Add salt and pepper, more lemon juice, roasted garlic, maple syrup, and water to taste.
- For raw garlic Honey Dijon Dressing:Add 1 clove minced garlic, 1 ½ tablespoons lemon juice, tahini, maple syrup, mustard, and water to a medium bowl. Mix well to combine. Add salt and pepper, more lemon juice, maple syrup, and water to taste.
