Step 1. Finely chop the chipotle peppers in adobo.
Step 2. Transfer the chopped peppers to a small bowl. Add adobo liquid, tahini, mellow miso, maple syrup, vinegar, and water. Mix well to combine.

Miso is a whole-soy food. Miso is not associated with the stomach cancer risk attributed to the salt in other fermented foods like kimchi. Ingredients
- 1 to 2 chipotle peppers in adobo sauce finely chopped (canned)
- 1 tablespoon plus 1 teaspoon adobo sauce or to taste (from canned chipotle peppers)
- ยผ cup tahini
- 1 tablespoon plus 1 teaspoon mellow miso or white miso
- 2 teaspoons maple syrup plus more to taste
- 2 teaspoons vinegar (apple cider or rice vinegar
- ยผ cup water
Instructions
- Mince the chipotle peppers.
- Combine: In a medium bowl, mix the chopped peppers, adobo liquid, tahini, miso, maple syrup, vinegar, and water until smooth.
