- Optional Homemade Pita Chips: Add the remaining roasted garlic to about 2 tablespoons olive oil and a generous dash of smoked paprika, and salt to taste. Mash the garlic. Spread onto pita wedges. Hi. The amount of beet does not significantly change the outcome of the recipe. Not enough to require an exact amount. 1 large beet, roasted, will work. The other half of the roasted garlic is used to make the garlic oil for the toasted pita chips. Hence, the entire garlic is used which is why I went through the effort of making the chips to show this.
