📖 How to Make Dairy-Free Dill Dressing Without Oil

- Start by adding the water, lemon juice, garlic, Dijon, dill, parsley, dates, capers with brine, and nutritional yeast to a tall jar that fits your immersion blender.
- Blend until smooth. Then add the pumpkin seeds and blend again until the mixture is creamy and thick.
- Taste and adjust—add a pinch of salt, some pepper, or a splash of olive oil if you like.
- Enjoy Dill Dressing with salads, pasta salads, grain bowls, roasted or steamed veggies, in wraps and sandwiches, with tofu or tempeh, or as a dip for crudites.

Raw pumpkin seeds are best for a creamy texture and mild flavor. Roasted seeds can work, but they may make the dressing thicker and more bitter. Roasting at high temperatures can also create acrylamides—compounds that form during browning and are best minimized for long-term health. For the most nutritious option, stick with raw or lightly toasted seeds.
You can freeze Dill Dressing if needed. Pour into an airtight container, leaving some space for expansion. Thaw in the fridge overnight and re-blend or stir well before using

Ingredients
- ¼ cup water
- 1 medium lemon zest and juice
- 2 small cloves garlic
- 2 ½ teaspoons Dijon mustard

Instructions

Notes
- Some mustards are stronger than others. I recommend starting with 2 teaspoons and adding more to taste, up to 3 teaspoons for a bolder flavor.
- Fresh herbs - Substitute the parsley and dill with fresh herbs you have on hand.
- Soak pumpkin seeds for 15 minutes if using a lower-power blender.
