Below, I share ingredient notes from both a nutrition expert's and trained chef's perspective.
Extra-firm tofu or super-firm tofu works best with these tofu marinades. Press the tofu beforehand, or use super firm or sprouted tofu which is pre pressed. Plus, super firm tofu has the most plant-based protein of all the types of tofu.
Soy Tofu Marinade:

- Soy Sauce or Tamari: Adds savory umami flavor to each marinade. Use low-sodium if preferred, or substitute tamari for a gluten-free option.
- Rice Vinegar: Brightens the marinades and balances the richer ingredients.
- Maple Syrup: Adds just enough sweetness to balance the acidity and encourages caramelization during cooking.
- Toasted Sesame Oil (optional): Adds a rich, nutty aroma. A little goes a long way, and it can be omitted if preferred.
- Garlic and Ginger: Fresh garlic and ginger provide bold, aromatic flavor in all three marinades.
- Cornstarch (optional): Mixed with water into a slurry, it thickens the maple-soy and Thai marinades into glossy sauces that cling beautifully to the tofu.
Thai Tofu Marinade:

- Thai Red Curry Paste or Gochujang: Thai red curry paste creates a fragrant, mildly spicy Thai tofu marinade, while gochujang adds a deeper, sweeter heat.
- Unsweetened Nondairy Milk, Nondairy Creamer, or Coconut Milk: Stir into the Thai red curry sauce after cooking for an even creamier finish.
Peanut Tofu Marinade:

- Peanut Butter, Almond Butter, Cashew Butter, or Tahini: These create a creamy, flavorful marinade that also doubles as a delicious sauce.
- Lime Juice: Fresh lime juice brightens the peanut marinade and balances the richness of the nut butter.
🍋🟩 Substitutions
- Soy Sauce: Substitute coconut aminos for a soy-free option, keeping in mind the marinade will be slightly sweeter and less salty. Tamari works well for a gluten-free alternative.
- Rice Vinegar: Fresh lime juice can be used in its place, though each will slightly change the flavor.
- Maple Syrup: Date syrup or agave syrup are excellent substitutes.
- Toasted Sesame Oil: Omit it for an oil-free version or substitute chili oil for extra heat.
- Fresh Garlic: Garlic powder works in a pinch. Use about ½ teaspoon per clove.
- Fresh Ginger: Substitute ¼ teaspoon ground ginger per tablespoon of fresh ginger, though fresh provides the brightest flavor.
- Thai Red Curry Paste: Gochujang creates a deeper, sweeter heat, while yellow curry paste offers a milder flavor.
- Peanut Butter: Almond butter, cashew butter, or tahini all work beautifully in the creamy marinade.
- Lime Juice: More rice vinegar can be substituted in the peanut marinade.
- Unsweetened Nondairy Milk: Soy milk keeps the Thai curry sauce high in protein, while coconut milk creates a richer, creamier sauce. Oat or almond milk also work. Or use a nondairy creamer.
- Cornstarch: Arrowroot starch or tapioca starch can be used to thicken the maple-soy and Thai red curry sauces.
☑️ Choosing the Best Tofu
For the best tofu marinade recipe, I recommend using super-firm or extra-firm tofu. Super firm contains very little excess moisture, so there's no need to press it, and it holds its shape beautifully after marinating. If using extra-firm tofu, press it for at least 20 minutes before marinating to remove excess water.
One of my favorite things about this recipe is that you can prepare the tofu in three different ways. Each creates a completely different texture using the same marinades.
Grated Tofu
Grated tofu develops lots of crispy edges and readily absorbs the marinade, making it perfect for grain bowls, tacos, wraps, fried rice, and pasta dishes.
Cubed Tofu
Cubed tofu is the classic choice for stir-fries, salads, meal prep, and rice bowls. The cubes become golden on the outside while remaining tender in the center.
Tofu Ribbons
Use a Y-peeler to shave the tofu into thin ribbons. Once cooked, they become surprisingly tender and silky, making them ideal for sandwiches, noodle bowls, stir-fries, and wraps.
📝 How to Marinate Tofu
The complete recipe with exact amounts is below. These additional tips will help you get the best results.

- Prepare the marinades. Make one, two, or all three marinades for easy meal prep. Add the ingredients for each marinade to a separate airtight container.

- Whisk the marinade. Choose from: Maple-Soy Marinade, Thai Red Curry Marinade, Creamy Peanut Marinade. Whisk together the marinade ingredients until smooth, or use an immersion blender or blender for an even creamier, smoother sauce.

- Prepare the tofu: Press extra-firm tofu for about 15 minutes, or use super-firm tofu without pressing. Choose one of these three methods depending on the texture you want: Ribboned: Use a Y-peeler to shave the tofu into thin strips for a delicate texture that's delicious in noodle dishes, wraps, and stir-fries.

Grated: Use the large holes of a box grater for crispy crumbles that are perfect for tacos, grain bowls, and pasta.

Cubed: Cut the tofu into bite-sized cubes for stir-fries, salads, and meal prep.

- Marinate the tofu: Transfer the tofu and marinade to an airtight container or shallow dish.

Gently toss until every piece is coated. If you're wondering how long to marinate tofu, even 15 minutes adds plenty of flavor when you're short on time. For the best tofu marinade, refrigerate the tofu for at least 1 hour, or overnight for maximum flavor.

The tofu can be refrigerated in the marinade for up to 4 days.
🎛️ How to Cook Marinated Tofu
Once your tofu has marinated for at least 30 minutes-or overnight for the deepest flavor-cook it using your preferred method. These easy marinated tofu recipes work well whether you've grated, cubed, or shaved the tofu into ribbons.
Pan-Fry

- Heat a lightly oiled nonstick or cast-iron skillet over medium-high heat. Add the marinated tofu in a single layer.

- Cook until golden brown and lightly crisp, stirring or turning occasionally for even browning. Soy Tofu: Add cornstarch dissolved in water for a thicker sauce.

Bake
Arrange the marinated tofu in a single layer on a parchment-lined baking sheet. Bake until lightly browned and caramelized around the edges, flipping halfway through cooking.
Air Fry
Place the marinated tofu in a single layer in the air fryer basket, leaving space between the pieces. Air fry until golden and crisp, shaking the basket halfway through cooking.
Grill
Cubed tofu also grills beautifully. Thread the cubes onto skewers or place them directly on a well-oiled grill grate and cook until lightly charred on all sides.
Tip: Don't discard the leftover marinade. Heat it in a small saucepan to use as a flavorful sauce. For the maple-soy and Thai red curry marinades, stir in a cornstarch slurry while heating to thicken. For an extra creamy Thai sauce, add a splash of unsweetened nondairy milk or coconut milk.
No time to marinate? Cook the tofu first, then warm the marinade into a sauce and toss it with the tofu just before serving. It's a great shortcut for busy weeknights.
🫙 Turn the Marinades into Sauces
One of my favorite things about these recipes is that the marinades also double as delicious sauces. You can either marinate the tofu before cooking or cook the tofu separately and use the marinade as a finishing sauce.
Simply pour the unused marinade into a small saucepan and heat over medium heat. Or add them to previously cooked tofu or even noodles.

For the Soy Tofu Marinade, whisk together 1 teaspoon cornstarch with 1 tablespoon water to make a slurry. Stir it into the warm marinade and simmer for 1 to 2 minutes, or until thickened into a glossy sauce.
For the Thai Tofu Marinade, stir in the optional nondairy milk or coconut milk while heating to create an extra creamy sauce.
For the Peanut Tofu Marinade, stir in the warm water to thin while heating to create an extra creamy sauce. Add more tamari or soy sauce to taste.
Drizzle the finished sauce over cooked tofu, grain bowls, rice, noodles, roasted vegetables, or salads.

Marinate the tofu in the fridge for at least 30 minutes or up to 4 days.
For pan frying the marinated tofu, flip tofu pieces every 2 to 3 minutes until brown and crispy. Then add reserved marinade to the pan and move the pan around, flipping the tofu often to coat it in the marinade fully. Finish cooking on medium heat until the marinade is reduced. It should take another 2 to 3 minutes.
For air frying the marinated tofu, cook the tofu pieces for about 10 minutes at 400ºF, or until golden brown. Shake the container after 5 minutes.
For baking the tofu, cook the tofu pieces for at 425ºF for about 15 minutes, or until golden brown. Flip the pieces over after 10 minutes.
For best results, always press the block of tofu before marinating it. Removing excess liquid will allow for more of the flavorful marinade to be absorbed by the tofu. Or use super firm tofu which has already been pre-pressed to save time.

The ingredients are good. However why is every recipe recommending marinating tofu for at least 15 or 30 minutes? Marinating that long literally colors the surface. To have the flavor penetrate into a 1x1x2 cm piece my experience is you need at least 24 hours, 48 hours even better. In a storage container, flip over regularly.

I liked the peanut marinade. Sadly there's a new feature over laying the print recipe feature which means I can't copy the recipe to put in a note on my calendar app (the best app ever, called Colornote).
