The zucchini practically disappears as it bakes, leaving behind an exceptionally moist chocolate cake without any zucchini taste. It's the kind of chocolate cake that tastes indulgent enough for dessert but is wholesome enough that I'd happily eat a slice for breakfast.
Plus, it's surprisingly filling. With fiber from the zucchini, dates, oats, and sorghum, plus protein from tofu and soy milk, one slice is light yet remarkably satisfying.

👩🏽⚕️ Dietitian's Note
What makes this chocolate zucchini cake different is that several of the ingredients are doing double duty.
Zucchini adds moisture while contributing fiber, so you can make an exceptionally moist cake without needing oil in the batter.
Medjool dates provide sweetness along with fiber and naturally occurring micronutrients, rather than using refined sugar as the primary sweetener.
Sorghum and oats are whole grains and contribute additional fiber.
Silken tofu helps replace the structure and moisture normally provided by eggs while also adding plant-based protein.
And cocoa powder isn't just there for flavor. Cocoa contains naturally occurring polyphenols.
Together, these ingredients make a chocolate cake that's fiber-packed, moist, satisfying, good for weight management, and nutrient-dense while still tasting like dessert.
Why You'll Love This Recipe:
This healthy chocolate cake with zucchini is delicious and easy to make. Plus, it's:
- Delicious. The Zucchini is undetectable. You won't taste the zucchini. It virtually disappears into the chocolate cake while helping make it incredibly moist.
- Deeply chocolatey. Cocoa powder delivers plenty of rich chocolate flavor, with optional dark chocolate chips for even more.
- Light yet satisfying. You get a moist, chocolatey slice that satisfies without feeling overly heavy.
- Packed with fiber. Zucchini, Medjool dates, sorghum flour, and oats all contribute fiber.
- Naturally sweetened. Medjool dates provide the sweetness in the cake batter without refined sugar.
- Oil-Free. Zucchini and silken tofu help create that moist texture without added oil.
- Vegan and gluten-free. No eggs or dairy, and the cake is made with sorghum and certified gluten-free oat flour.
- Easy to make. Blend, stir, fold in the zucchini, and bake.
👩🏼🌾 Ingredients
Below, I share ingredient notes from both a nutrition expert's and trained chef's perspective.

- Sorghum flour: A naturally gluten-free whole-grain flour that adds structure while contributing fiber and nutrients.
- Certified gluten-free oat flour: Keeps the crumb tender while adding the goodness of oats.
- Unsweetened cocoa powder: The key to the cake's deep, rich chocolate flavor.
- Baking powder and baking soda: Give the cake lift and keep the texture from becoming too dense.
- Silken tofu: The unexpected ingredient that helps make this cake moist and satisfying while adding plant-based protein. You won't taste it.
- Medjool dates: Naturally sweeten the cake while also contributing fiber.
- Unsweetened soy milk: Helps blend the dates and tofu into a smooth mixture and adds additional plant-based protein.
- Vanilla extract: Rounds out and enhances the chocolate flavor.
- Apple cider vinegar: Reacts with the baking soda to help give this egg-free cake lift.
- Peanut, almond, cashew or seed butter: Just 1 tablespoon adds richness and improves the texture.
- Zucchini: The secret to the incredibly moist texture. You won't taste it in the finished cake.
- Dark chocolate chips (optional): Great without them, but add for an even more intensely chocolatey cake.

🌱 Substitutions
This recipe is versatile and easy to adapt. Below are some simple ingredient substitutions.
- Sorghum flour: I recommend using sorghum flour for the tested texture, or try a 1:1 substitution with millet flour. If gluten-free is not required, whole-wheat flour should work as a 1:1 substitute by weight or volume, though the texture may differ slightly.
- Don't like chocolate? Replace the ⅓ cup + 1 tablespoon cocoa powder with ⅓ cup + 1 tablespoon additional oat flour. Because oat flour absorbs differently from cocoa, add 1-2 tablespoons extra nondairy milk only if the batter seems too thick.
- Nondairy milk: Use any unsweetened milk, though soy milk will provide more protein than most alternatives.
- Silken tofu: Substitute with an equal amount of thick, unsweetened nondairy or dairy yogurt for a similarly moist, tender texture.
- Make it nut-free: Use tahini instead of peanut, almond, or cashew butter.
- Chocolate chips: They are completely optional. Leave them out for a less sweet cake and to keep the batter naturally sweetened entirely with dates.
📝 How to Make Healthy Zucchini Chocolate Cake
The complete recipe with exact amounts is below. These additional tips will help you get the best results.
Prepare the zucchini:

- Use the julienne side of a julienne grater to grate into thin strips, or use a chef's knife to julienne the zucchini into long thin strips.

- Do not squeeze the zucchini to remove the water. The water remaining in the zucchini helps create the moist texture of this cake.

- Cut the strips into pieces about 1 ½ inches long. Measure 1 ½ cups (180 g) of cut zucchini.
Blend the wet ingredients:

- Blend the wet ingredients until completely smooth. Make sure no visible pieces of Medjool date remain.

- A smooth mixture distributes the sweetness evenly and gives the muffins a more consistent texture.
Combine the ingredients:

- Add the dry ingredients to a large bowl.

- Whisk thoroughly so the cocoa, baking powder, and baking soda are evenly distributed before adding the wet mixture.

- Combine the wet and dry ingredients.

- Expect the batter to look much thicker than regular cake batter. Resist the urge to add extra milk right away.

- Fold in the zucchini. Let the batter sit for a few minutes after folding it in.

- The zucchini will begin releasing moisture, making the batter softer and easier to spread.
Baking zucchini chocolate cake:

- Scoop rather than pour the batter, then gently shake or agitate the dish to level it. Aim for a batter depth of about 1 ½ inches. Top with bits of cut zucchini and sesame seeds, as desired.

- Start checking at 25 minutes. Look for a set center and a toothpick with a few moist crumbs, not a completely dry toothpick. The thinner the layer of batter, the faster the cake will bake, so if using a larger pan, start checking a few minutes earlier to avoid overbaking.

- Cool completely. This is essential. The cake is very moist when hot and continues to set as it cools, giving you a cleaner slice and better texture.

- Cut it into 12 squares for the perfect portion-rich, chocolatey, and surprisingly filling.
✔️ Storage & Meal Prep
Let the cake cool completely before slicing it.
To store: Transfer the sliced cake in an airtight container in the refrigerator. Because it's an especially moist cake made with fresh zucchini and silken tofu, I prefer refrigerating it rather than keeping it at room temperature for an extended period.
To freeze: Slice the cake and freeze the pieces in a freezer-safe container, separating layers with parchment paper, for up to 3 months. Thaw individual slices overnight in the refrigerator or at room temperature for a quicker option.
Meal prep: This cake is great for meal prep-the moist texture holds up well after refrigerating or freezing.

🙋🏽♀️ Recipe FAQs
It depends on the ingredients. This healthy chocolate zucchini cake is made with zucchini, Medjool dates, silken tofu, cocoa powder, sorghum flour, and oat flour. It's naturally sweetened with dates, contains whole grains, and doesn't require oil in the batter.
It's also packed with fiber from several whole-food ingredients, making it quite different from a conventional chocolate cake made primarily with refined flour, sugar, and butter.
No-you really can't taste the zucchini in this cake. Cocoa and dates provide the dominant flavors, while the zucchini essentially disappears into the crumb as it bakes.
Its main job is to add moisture and fiber, not zucchini flavor.
Zucchini holds a lot of water, which helps keep chocolate cake moist and tender as it bakes. Its mild flavor also makes it particularly well suited to chocolate cake because cocoa easily masks the zucchini flavor.
Not for this recipe. Do not squeeze the zucchini. Its natural moisture helps hydrate the very thick batter as it sits and bakes, creating a moist, tender chocolate cake without added oil. Simply grate or julienne the zucchini, cut any long pieces into shorter strips, and fold it directly into the batter.
The batter for this recipe is supposed to be very thick, so don't worry if it looks much thicker than traditional cake batter.
Once the zucchini is folded in and allowed to sit briefly, it starts releasing moisture into the batter. If your mixture is genuinely dry rather than simply thick, add nondairy milk just 1 tablespoon at a time.

EQUIPMENT
- 1 Baking dish see notes
- 1 Large mixing bowl
- 1 julienne grater or chef's knife
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C). Use a 9 × 6½ × 2-inch baking dish, or an 8-inch square or 9-inch round pan. Lightly grease the dish as needed if it is not nonstick.
- Prepare the zucchini: Julienne the zucchini, then cut the longer strips into pieces about 1½ inches long. Alternatively, grate it using the large holes of a box grater. Measure 1½ cups (180 g). Do not squeeze the zucchini-you want to keep its natural moisture.
- Combine the dry ingredients: In a large bowl, whisk together the sorghum flour, oat flour, cocoa powder, baking powder, baking soda, and salt (if using).
- Blend the wet ingredients: Add the silken tofu, Medjool dates, nondairy milk, vanilla extract, apple cider vinegar, and peanut butter to a blender. Blend until completely smooth.
- Make the batter: Pour the blended wet ingredients into the dry ingredients and stir until almost combined. Fold in the zucchini and optional chocolate chips just until incorporated. The batter will be very thick-this is normal. Let it sit briefly so the zucchini releases some moisture and the batter becomes easier to spread.
- Transfer to the baking dish: Scoop the batter into the prepared baking dish. Gently shake or agitate the dish to help level the thick batter. In my 9 × 6½-inch dish, the batter was about 1½ inches deep. If desired, top with a little finely grated zucchini and sesame seeds.
- Bake: Bake for 25 to 30 minutes, until the center is set and a toothpick inserted into the center comes out with a few moist crumbs. If the top looks dry after about 20 minutes, optionally brush it very lightly with oil using a pastry brush.
- Cool: Let the cake cool completely in the baking dish before slicing. The moist crumb will continue to set as it cools.

I’m not a chocolate fan, Nisha can I make it without the cocoa? Could you suggest something else for a vanilla zucchini cake.

Hi. Thank you. Replace the ⅓ cup + 1 tablespoon cocoa powder with ⅓ cup + 1 tablespoon additional oat flour. Because oat flour absorbs differently from cocoa, add 1–2 tablespoons extra soy milk only if the batter seems too thick.
