Pour water heated to around 170º F over the tea leaves.
Let the tea steep for 2 to 3 minutes, adjusting the time based on how strong you like your tea.
Remove the infuser and set it aside with the leaves. You can reuse it for at least two more brews.
Notes
Use about 1 teaspoon of loose-leaf sencha green tea per cup of water. Heat the water to 160ºF to 170ºF (70–77ºC), the ideal temperature range for brewing sencha green tea without bitterness. If your kettle does not have temperature controls, pour near-boiling water into a heatproof container and let it cool for about 2 minutes before brewing.I prefer using a personal tea maker for single-serve cups of sencha green tea. It includes a loose tea infuser, insulated heatproof glass cup, and lid that doubles as a coaster.A temperature-controlled kettle is one of the best tools for brewing green tea properly, making it easy to achieve the ideal brewing temperature for sencha, matcha, coffee, and other delicate teas.Find my recommended sencha green tea brands here.
