Creamy Lime Miso Dressing with hemp seeds is bright, savory, and oil-free. Ready in 5 minutes, it’s delicious on salads, grain bowls, and roasted vegetables.
Blend all the dressing ingredients except the salt until smooth, adding water as needed. Taste and add salt only if needed.
Storage: Refrigerate any remaining dressing in an airtight container for up to 5 days. The dressing thickens when chilled. Stir in a little water or fresh lime juice to loosen it.

Notes
For a milder dressing, briefly sauté the garlic and let it cool before blending for a milder flavor.Zest only the green outer layer of the lime; the white pith can taste bitter. If making the dressing ahead, leave out the lime zest as the lime flavor can turn bitter in the fridge. Stir some in to taste just before serving. Why miso instead of salt? It brings a deep, savory flavor, and some human studies suggest that miso may affect blood pressure differently than you’d expect from its sodium content. It still contains sodium, though, so I use just enough to make this dressing delicious.
