Ingredients

Tahini Dressing:
¼cuptahinior extra virgin olive oil
1 ½tablespoonspomegranate molassesor balsamic glaze, or balsamic vinegar
1largelemonjuice (plus more to taste)
Salt and freshly ground black pepperto taste
Instructions
Grate the vegetables: Peel the beetroots and carrots as needed. Coarsely grate them using a box grater or food processor fitted with a shredding attachment.
Combine: Add the grated beets and carrots to a large bowl with the onion, parsley, dill, and pomegranate seeds.
Make the dressing: Whisk together the tahini, lemon juice, and balsamic vinegar or pomegranate molasses until creamy, adding water as needed to reach a pourable consistency.
Dress the salad: Pour the dressing over the vegetables and toss until evenly coated.
Serve: Garnish with additional pomegranate seeds and fresh herbs, and pumpkin seeds, if desired, and serve.
Notes
