with Chia Seeds
Gel the chia seeds:
Add the chia seeds to 2 cups water. Mix well. Set aside for 10 minutes. Stir frequently so they evenly gel.
Scoop the watermelon
and transfer it to a blender.
the watermelon with the lime zest and juice, and mint until smooth.
Pour the gelled chia seeds into the blender with the watermelon juice. Pulse
a few times until evenly incorporated.
