Cherry Tomato Salad with Lentils


Step 1. Use pre-cooked lentils, or cook dry lentils beforehand according to the directions on the packet until al dente. Do not overcook them or the salad will be mushy.

Step 2. Whisk the olive oil, lemon juice, garlic, salt, pepper, and crushed red pepper in a small bowl. Set aside.

Step 3. Transfer the tomatoes, lentils, and red onion to a salad mixing bowl.

Step 4: Add the dressing, and fresh herbs and toss to combine. Add avocado for serving and mix to incorporate.

Storage: Refrigerate any remaining Cherry Tomato Salad with Lentils for up to 3 days. Add avocado for serving.
