Raw Carrot Salad
The pepitas in this recipe are optional. If you would like to add them, I recommend roasting the raw pepitas to bring out their best texture and flavor.
Combine the carrots, olive oil, lemon zest and juice, fresh herbs in a medium bowl. Toss to combine until the carrot ribbons are evenly coated in the oil and juice. Season with salt and pepper.
Step 3. Top with roasted pepitas for serving.
