Lemon & Ginger Tea

Immune-boosting Lemon & Ginger Tea ice cubes are a convenient and quick way to soothe an upset tummy, help stave off nausea, or ease sick days. Simply add hot water for serving.

Ingredients

  • 4 tablespoons grated ginger (about one 4-inch piece, peeled, and grated on the largest holes of a coarse box grater)
  • 1 large lemon sliced into thin rounds, then cut into 8 small triangles per round
  • Agave or maple syrup to taste

Instructions

  • Simmer and steep ginger: Place the grated ginger into a small saucepan with 3 cups water. Bring to a simmer. Reduce the heat to low and simmer for 10 minutes uncovered. Remove from the heat and let sit for 5 minutes.
  • Strain the water using a tea strainer. Transfer to ice cube trays. Add about 5 lemon triangles to each cube.
  • Freeze overnight. Good for up to 3 months.
  • For serving: Add one to two cubes to a mug or an insulated bottle with the desired amount of hot water. Enjoy warm or chilled.

Notes

  • Straining the liquid to remove the grated ginger is optional.
  • To preserve even more of the antioxidant power of the ginger, do not boil it. Simply place the grated ginger in recently boiled water and steep for 10 minutes. Add the lemon to the once cube trays once the water is cool.
  • Place two cubes in a large thermos for on-the-go. Add hot water for serving. This makes a lukewarm tea, perfect for sipping throughout the day.
  • Use a large metal straw for drinking to prevent the lemon from damaging tooth enamel if sipping over prolonged periods.
  • Storage: Freeze Lemon & Ginger Tea in a large ice cube tray for up to 3 months.
