Tofu: Toss the tofu cubes until they are evenly coated with the seasonings. Transfer them to an air fryer basket, or to a nonstick baking sheet if using an oven.
-Rehydrate the vermicelli noodles in boiling hot water according to the directions on the packet.
-Mix the dressing ingredients.
-Add the carrots, cabbage, peanuts, cilantro, and the dressing to a large bowl.
Toss noodles with the tofu. Serve room temperature or chilled. Refrigerate leftovers for up to 4 days. Perfect for picnics, BBQs, potlucks.
