10 budget-friendly ingredients for creamy dairy-free sauce.

For the sauce: Simmer the potatoes, carrots, onions until tender. Drain. Reserve 2 cups cooking water (broth).

Make the dairy-free sauce:  Use white beans, or cashews, or a mixture of both. Blend ingredients plus 1 cup broth until smooth.

Cook the pasta.  Optional: Steam asparagus. Add asparagus and marinated artichokes when heating.

Heat the gluten-free sauce with the pasta and desired veggies. Add lemon zest.
