Creamy Vegan Raita
For the raita, grate the cucumber using the larger holes on a box grater.
Add the grated cucumber, nondairy yogurt, lemon juice, salt, and cilantro to a medium bowl.
Toast cumin seeds in oil until fragrant. Cook aromatics. Add chickpeas.
Add tomato paste and cook 1 minute. Add water and kale. Cook until kale is just wilted.
