Peanut Soba Noodles  (High Protein)

Step 1. Place the cut tofu into the marinade.

Step 2. Gently toss the container until the tofu is coated with the marinade. Set aside for at least 15 minutes.

Step 3. Then spread onto a large rimmed nonstick sheet with the marinade and bake for 15 minutes, or until golden brown. Or air fry at 400ºF for about 10 minutes, or until golden brown.

Step 4. Transfer the peanut butter, PB Fit (if using), rice vinegar, lime juice, dates or maple syrup, ginger, hot sauce, and either 4 tablespoons water (with PB Fit), or 2 tablespoons water (without PB Fit). Blend on high until smooth.

Step 5. Bring a large pot of water to a gentle boil. Add salt. Place the spinach in the hot water for one minute, stirring. Then remove it with a spider or large sieve.

Step 6. Bring the water in the pot back to boil. Cook the soba noodles as described on the packet. Or follow my FAQ directions in blog post.
