To Make Crispy Air Fryer Tofu:
Toss the tofu with tamari, cornstarch, garlic powder, onion powder, paprika, salt, and olive oil. The oil is optional, but a little goes a long way to get the perfect crispy texture.
Meanwhile, make the vegan roux with olive oil and flour. Heat the oil and add the flour. Whisk constantly so the roux does not burn.
Add unsweetened nondairy milk and stir constantly so that no lumps form.
Dissolve white miso in water before adding it to the sauce.
