Creamy Vegan Pasta with Air Fryer Tofu

To Make Crispy Air Fryer Tofu: Toss the tofu with tamari, cornstarch, garlic powder, onion powder, paprika, salt, and olive oil. The oil is optional, but a little goes a long way to get the perfect crispy texture.

To Make Crispy Air Fryer Tofu: Place the tofu in a single layer. Air fry at 400ºF for 10 minutes. Toss. Cook for about 2 minutes more, or until crispy.

Meanwhile, make the vegan roux with olive oil and flour. Heat the oil and add the flour. Whisk constantly so the roux does not burn.  Add unsweetened nondairy milk and stir constantly so that no lumps form. Dissolve white miso in water before adding it to the sauce.

Combine: Stir in the tofu (7 ounces), and about 2 1/2 cups steamed broccoli florets. Add the desired amount of pasta. Serve immediately.
