Orzo Rice

A pilaf style recipe perfect for making orzo salad, orzo pasta dishes, or adding to veggie or grain bowls.

Ingredients

Step 1. Toast the orzo: Heat olive oil or vegan butter in a sauté pan or saucepan. Add the orzo and cook for about 4 minutes, or until golden. Stir frequently so it toasts evenly and does not burn.

Step 2. Add the rice and cook for one more minute, stirring constantly.

Step 3. Pour in the vegetable broth and bring the liquid to a simmer.

Step 4. Reduce the heat to low and simmer covered for 15 minutes.

Step 5. Remove from the heat and set aside for 10 minutes before removing the lid.

Step 6. Remove the lid and fluff the orzo rice gently with a fork.
