Tofu Noodles  (easy, healthy)


Step 1. Combine the tamari, maple syrup, vinegar, nutritional yeast, smoked paprika, garlic powder, chipotle powder, and 3 tablespoons water.

Step 2. Add the green onion and stir to incorporate.

Step 3: Grate the block of tofu on the largest holes of a box grater, or thinly slice it using a wide Y-peeler. Do this directly over the marinade.

Step 4. Mix the tofu into the marinade until evenly coated.

Step 5. Fill a large heatproof bowl with boiling water. Submerge the noodles in the water. Cover to keep the heat in. Soak for the time specified on the package.

Step 6. Cook the tofu until golden brown. Transfer the noodles to the skillet with the tofu. Add the cabbage and mix. Continue cooking until warmed through. Drizzle with toasted sesame oil, and garnish with sesame seeds.
