Red Lentil Wraps with Flaxseeds

 2 Ingredients

Step 1. Transfer 1 cup flax seeds to a high-speed blender.

Step 2. Grind them until a powder forms.

Step 3. Add 1 cup rinsed red lentils.

Step 4. Add 4 cups of room temperature water. Set aside to soak for a minimum of 3 hours. Do not drain.

Step 5. Blend on high until smooth. The batter should be similar in texture to a crepe batter, but slightly thicker. It should be smooth, lump-free, and pourable, but not watery.

Step 6. Heat a nonstick or seasoned cast iron skillet over medium-high heat. Once the pan is hot, pour in one-half cup batter into the center.

Step 7. Immediately swirl the pan around to create a thin, even layer of batter, and cook the wrap for about 5 minutes, or until bubbles start appearing on top, and the bottom releases effortlessly.

Step 8. Flip and cook for about 4 minutes more, or until golden brown, pressing down on the top occasionally with the flat side of a spatula.
