Add the ingredients for the peanut dressing to a medium bowl. Mix well to combine.

Add one third of the dressing to the chopped kale in a large bowl. Massage the kale with the dressing until it is just wilted.

Place the remaining salad ingredients into the bowl with the dressed kale. Add the desired amount of dressing. Mix well to combine. Add the avocado for serving.

Prep this recipe ahead of time. Refrigerate any remaining salad for up to 3 days.
